La Chablisienne is not only one of France’s very best cooperatives, it is also the business card for the wines from Chablis and the surrounding area. In 1996, this was confirmed by the authoritant magazine “La Revue des Vins de France” by the election of best cave cooperative in France. The company alone accounts for about 30% of total production and combines that with a range of impeccable quality, whether it is a simple Petit Chablis or a prestigious Grand Cru. Although La Chablisienne is today one of the most successful and leading companies in all of France, the company was born out of pure poverty, when in 1923 a group of 180 small farmers joined together to form a cooperative. In 1947, a merger with another cooperative in Chablis was established. Today, La Chablisienne has 300 members with 1130 hectares of vineyards. Pearls in the crown are the six Grands Cru’s, with more than 30 Premier Cru’s.

This wine has a very rich, complex, roasted almonds, buttery with citrus notes and a slight woody influence. The flavour is rich, meaty, concentrated with aromas of dried fruit and beewax.

€ 30,00 INC. VAT The Zeltinger Schlossberg is the slope adjacent to the Zeltinger sundial. So top of the top. It is the steepest section of this slope from which the wine is obtained, over 80 years old root-true vines in single stake education with the most extreme orientation. Unlike the Zeltinger Sonnenuhr, the Schlossberg is more clearly at home in the slate. The nose is clearly dominated by flint, wet slate. Stone, minerality and salt in the foreground. The whole thing is underpinned by a flower meadow, mirabelle, light reneklode, also a bit of quince, a touch of orange peel and lime underneath. More to the mineral than to the citrus fruit. € 40,00 NO VAT (private collection)The 2021 Soave Classico La Rocca seduces, flaunting its rich bouquet of confectionary spice and sweet oak before coming further into focus with baked apple and chamomile notes. This is elegance personified, opulent at first and then decidedly savory and precise, with crisp orchard fruits flowing across a saline-tinged, acidic core. The 2021 finishes with dramatic length, staining the palate in youthful concentration as zesty citrus combines with dried apricot and peach. This is an especially decedent vintage for La Rocca, yet the balance is something to behold. It was refined for one year in a mix of 2000- and 500-liter Slavonian oak barrels.

€ 74,00 NO VAT (private collection)The 2021 Gewurztraminer Furstentum Grand Cru opens with peach compote and trails vestiges of passion fruit. The palate is sweet with Mirabelle jelly, almost creamy. This seems to have an internal combustion engine putting out peach, puffing away, letting out bursts of lemon and rose, but coming to concentrated, orange zest and peach skin finish that is just so taut and bright. The 47 g/L of residual sweetness is a fact, and the wine itself is alchemy. I have to borrow Catherine Faller’s architectural simile, noting that this wine "starts Baroque but finishes Gothic."
